I'm going on vacation to Seattle next week… what other activities besides these would you suggest?
I plan to visit the stuff below... anything else you recommend?

You need to get out on the water!
There are lots of ways to accomplish that, depending on your interest and budget.
A ferry ride to Bainbridge Island is one easy way – walk on to the ferry, get off at Bainbridge Island for an ice cream or coffee in town, wander the shops and then hop on for a return ride. Do this one on a sunny afternoon for the best views of Seattle on the return trip.
Other possibilities include:
Riding the Ducks tour – their vehicles will take you into lake union for a peek at our houseboat community.
Rent a rowboat at the center for wooden boats (Lake Union)
Rent a canoe at the UW boat center (Lake Washington)
Take an argosy cruise through Lake Union and the Locks.
The underground tour in Pioneer Square is interesting if you haven’t done it before.
The Museum of Flight at Boeing Field is good too, especially if you are interested in airplanes or history.
If you have any free time left (looks like you have a lot of stuff planned!), a walk around Greenlake is nice.

It sounds like you got it covered. You are going to be so busy going to all those places (and probably out of money due to costs of getting in to some of them) that you really dont need another place, do you?
that is a great list. I haven’t been to all those places and lived around seattle my whole life. I have to honestly say that I hated EMP. It was such a waste and my BF and I do like music but it wasn’t much about the scene here and it was all stuff you can read alone online. They have have a computer room where you just listen to interviews from people you don’t know who more than half are….. with headphones on…… with the internet these days I just don’t see the point.
But the steak and chicken appetizers in the restaurant are to die for.

Aside from Fremont, check out Ballard, the International District, and the University District as all other cool places to check out that are each very different, but with lots of different shops and restaurants and styles.
I’d definitely recommend if you have the time to head up to Vancouver BC for a day. Vancouver is a beautiful town that is great to visit! They have one of the greatest Chinatown’s you will visit, a really friendly city, beautiful views, great shopping, and it’s just an excellent place to visit. I know you can catch a train up there from Edmonds round trip for $80 (I know it’s a bit pricy, but I was just looking into it so I knew the price. Buses are cheaper, but I feel like catching the train up for a day trip and live in Edmonds, but you could catch it in Seattle.), get there in 2 hours, hang out for the day and head back in the evening. You’d need a passport or birth certificate or such.
Depending on your further art interests, you might be interested in heading down to Tacoma to see more of Chihuly’s glasswork in the theatre district.
Everyone has made some great suggestions. One place that I would add is Mount Rainier. I realize Mount Rainier isn’t in Seattle, but if you have time, it is well worth the 2.5-3 hours it takes to get there. Viewing the mountain upclose is breathtaking.
If you decide to go, arrive early and head straight to the parking lot at Paradise (one of the locations there). Parking is ridiculous up there. Then, head to the other sites you passed on your way up when you leave Paradise.
I agree with Jennifer B., you need to get out on water. Take the ferry to Bainbridge or Bremerton or go to Friday Harbour and go for a whale watching trip. It’s not cheap but it’s absolutely Pacific Northwest at its best!!!!
Go to the new SciFi Museum in Seattle Center. I haven’t been there, but it’s supposed to be really cool.
